While the end of the season is creeping up on us, we try to hold on to sunshine and heat for as long as possible with these summer-centric recipes from our favorite locals chefs.

Grilled Shrimp with Mango Salsa and Maple Chipotle

SERVES 4 AS APPETIZER

Ingredients:
12 medium shrimp, peeled and de-veined

For the Salsa
3 mangos
1 cucumber
10 cherry tomatoes
10 mint leaves
3 tbs. olive oil
1 tsp. fresh-ground black pepper
1 tsp. salt

For the Sauce
4 tbs. maple syrup
4 tsp. chipotle powder

Directions:
Dice the mangos, cucumber, and tomatoes, chop the mint, and combine. Add the olive oil, salt and pepper, and toss. Whisk the maple syrup and chipotle powder until combined, then add the sauce to the salsa and mix until thoroughly combined.

Grill or broil the shrimp until pink on each side and cooked through (at least 30 seconds per side).

To plate, spoon the salsa onto small plates and place three grilled shrimp on top.
